Sumario:Food practices and behaviors in the rural area of Texcoco region are related to local food consumption practices —fundamentally based on maize—, however, they are influenced by a series of socio-cultural determinants that impose the urban-dominant forms of consumption, as a result of constant interaction of the original cultures with urban life and mass media. This paper presents advances in research on food culture in the region of Santa María Tecuanulco, based on field work done with teenager students in that village. This population group between 12 and 15 years of age contributed very valuable and interesting information of the knowledge they have about edible local products and the way they are consumed.
